The USDA requires soil to be certified (along with seeds, pesticides, fertilizers, etc).  In order for land to become certified, it must go through a three year waiting period during which the soil must be treated as if it were organic.  Crops grown on this land cannot be sold as Organic until it has gone through the full three year transition.  Our transitional land is in its first year of transition, to be certified Organic in 2013.
