Source: Asparagus to Zucchini
- 1 1/2-2 lbs. Rutabaga
- 2 T. Butter softened
- 3 oz. Blue Cheese crumbled
- 2 Eggs
- Heat oven to 350 degrees.
- Peel rutabaga, chop into chunks and steam over boiling water until tender -- about 10 minutes.
- Mash the hot rutabaga with butter and blue cheese.
- Beat in the eggs.
- Add salt and pepper to taste.
- Spread in a buttered baking dish and bake until set, about 30 minutes.
- Serve hot.
